Vegan butter or coconut oil: 2 tablespoons
Yellow onion, thinly sliced: 1 large
Garlic: 3-4 cloves
Fresh or frozen broccoli: 16 oz (chopped and divided)
Russet potato: 1 large
Vegetable broth: 3 cups
Unsweetened soy milk: 2 cups
Vegan cheddar cheese: 8 oz
Nutritional yeast: 3 tablespoons
Salt and pepper: to taste
Fresh broccoli florets
Heat coconut oil and vegan butter in a large pan. Keep the heat between low to medium. Now, add onions and garlic and sauté for 5-7 minutes. Make sure the broccoli and potatoes are finely chopped. Keep 1 cup of broccoli florets aside and add the remaining with the potatoes into the pan. Saute this for another 4-5 minutes. Then, add milk and broth to the pan and simmer for 30 minutes. You need to stir the mixture occasionally while it’s on simmer. Now, add the vegan cheese and yeast. You need to use an immersion blender to stir the mixture after the potato and broccoli are tender. Star anise: 2-3
Cinnamon stick: 1-2
Peppercorns: 1 tablespoon
Cloves: ½ teaspoon
Water: 6 cups
Onion: ½ small
Garlic cloves: 2 (crushed)

Shiitake mushrooms: 4-5 ounces
Tamari: 1/3 cup
Rice vinegar: 1-2 tablespoon

Cooked rice noodles: 5 ounces
