Ingredients

Standard Ingredients

½ Garlic cloves

1 medium diced onion

½ teaspoon of salt

Oil of cooking

2 cup of vegetables that are finely chopped (Bell peppers, sweet potatoes, mushrooms, carrots or spinach)

1 cup of cooked grains (millet or quinoa)

½ cup of cooked legumes (Black eyed peas, canned beans or lentils)

½ cup of texture or flavor builders such as chopped nuts chopped tomatoes, fresh herbs or sliced scallions.

3 spoon of spices (curry powder, black pepper, oregano, fennel or citrus zest)

1/ cup of dry base such as cornmeal or ground oats

Instructions

Take the pan and heat over 2 tablespoon of oil in a medium or high heat. Add salt, garlic and onion into it and cook it until the onions starts to get golden brown. Make sure you cook it for 2-3 minutes. You can add vegetables to it to make it soft for the next 5-10 minutes.

Transfer your cooked vegetables into the food processor and add all the remaining ingredients into the frying oil. Stir it well and cook it firmly and make sure you don’t overdo it as you don’t want to make a paste. Press the mixture up with your fingers and form a thin patty with it. If you think it is too crumbly you can make the mixture wet and add few dry base ingredients into it. Make sure you mix it until you think it has formed the right consistency. You can add salt to it according to your taste too.

Cook The Patties

You can form the mixture to make about 8 patties and place it in the baking sheet with a parchment paper. You can refrigerate the patties by uncovering it for the next 30 minutes. Make sure you don; skip any of this step while making it as it can make your veggie burger to something else You can also make you patty rest for 2-3 hours if you think your patties does not have the consistency to hold it all together.

If you think your patty is ready to be cooked, you can take a bowl and add 1 spoon of oil into it over a high or medium heat until it starts to shimmer. Cook 3-4 patties altogether until you see it gets to get brown. Heat up your patties for 3 or 5 minutes.

You can also heat up 1 tablespoon of oil in the pan before. Start to cook each of the batches of veggie burger. You can serve it immediately to your guests once it gets cooked.
