– Lasagna noodles, 12
– Olive oil, 2 tablespoons
– Broccoli, chopped
– Carrots, thinly sliced, 2
– Onion, chopped, 1 large
– Green bell peppers, 2
– Zucchini, 2 small
– Garlic cloves, 3
– Flour, ½ cup
– Milk, 3 cups
– Parmesan cheese, ¾ cup, divided
– Pepper, a ½ teaspoon
– Salt, a ½ teaspoon
– Chopped spinach, 1 package, thawed
– Curd cottage cheese, 8 ounces
– Ricotta cheese 24 ounces
– Mozzarella cheese, shredded, 1 ½ cups, divided


• Turn up the heat of the oven to 375°F. In the meantime, grease the casserole dish where you would be making your lasagna.

• Boil the lasagna noodles into a pot with salted water. Cook it for 8-10 minutes or until its firm to bite yet cooked rightly. Drain the water.

• Place a cast iron skillet on medium heat. When the oil is hot, do add carrots, broccoli, onions, zucchini, garlic, and bell peppers. Saute for at least 7 minutes and set it aside.

• Add flour in a saucepan. Gradually whisk the milk into it until it blends well. Bring the flour-milk mixture to boil over the medium heat. Cook for 5 minutes or until its thick and constantly stir.

• Add in a ½ cup of Parmesan cheese, pepper, and salt. Cook at least for 1 minute while you stir constantly. Remove the saucepan from the heat. Stir in some spinach. Reserve at least ½ cup of spinach mixture. Combine the ricotta cheese and cottage cheese together and stir very well.

• Spread ½ of the spinach mixture at the bottom of the prepared casserole dish. Layer with noodles, the cottage-ricotta mixture, again ½ spinach mixture, vegetables, and 2 cups mozzarella. The last layer will be of noodles. Top it with the spinach we reserved, and remaining cheese.

• Bake it in the casserole dish in the heated oven for at least 35 minutes. Let it get light brown color on top. Cool the lasagna for 10 minutes before you serve.

– Zucchini, sliced, 2
– Olive oil, cooking spray
– Green bell peppers, cut into inch pieces
– Fresh mushrooms, 8 ounces, sliced
– Onion, 1, cut into wedges
– Fresh basil, chopped, 1 tablespoon
– Garlic clove, 1, pressed
– Salt, ½ tsp
– Black pepper, ¼ tsp
– Lasagna noodles, 12
– Pasta sauce, 28 ounces
– Parmesan cheese, 1 cup, shredded
– Mozzarella cheese, 16 ounces


• Turn the oven heat to 400°F. Spray on a baking sheet with a cooking spray where you are going to cook the vegetarian lasagna.

• Arrange the bell peppers, zucchini, onion wedges, and mushrooms on the ready baking sheet. Scatter the chopped garlic and basil over the vegetables. Spray some oil over that. Now sprinkle some black pepper and salt to season.

• Bake in the heated oven for 10-25 minutes. Make sure that the vegetables become tender and light brown.

• Arrange a pot of lightly salted water. Put it on the oven to boil. Cook the lasagna into the boiling water while occasionally stirring. It must be cooked but firm to bite. Let the lasagna get cooked for at least 8 minutes. Drain the water once the lasagna is ready.

• In a saucepan, pour in the pasta sauce. Bring the sauce to simmer over medium-high heat. Mix the Parmesan cheese and mozzarella cheese in a small pot.

• Pour 1/3 cup of the pasta sauce in baking dish. Place 3 lasagna noodles over it. Now add ¼ of roasted vegetables on the noodles. Again cover it with ¼ of the sauce. Sprinkle ¼ of cheese mixture over sauce. Repeat the layering process 3 times more and end with spreading the remaining cheese.

• Bake it into the preheated oven until the sauce is bubbly and cheese melts completely. It will take around 20-25 minutes. Keep the lasagna to rest for about 10 minutes before your serve.
