1. Vegan Quinoa Burrito Bowls

These delicious quinoa burrito bowls are the perfect meal for any occasion. They are packed with flavourful veggies and delicious vegan toppings.

2 tbsp oil (olive or canola)

1 large red onion,

diced 3 cloves garlic,

chopped 1 cup quinoa,

rinsed 1 15oz can black beans, drained and rinsed

1/2 tsp cumin salt to taste pepper to taste

4-5 cups vegetables (I used carrots, broccoli, and cauliflower)

For the sauce: 2 tbsp peanut butter (or almond butter) juice of one lime 1/4 cup water 2-3 tbsp chili garlic sauce (depending on how spicy you like it!)

Toppings: Cilantro Avocado Black olives Salsa Daiya cheese (optional)

Heat oil in a wide pot over medium heat. Add diced onion and garlic, and sauté until both are translucent. Add rinsed quinoa and toast for a few minutes until it starts to turn golden. Pour in 1.5 cups water and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked through.

Meanwhile, prepare your sauce by mixing all the ingredients together in a bowl until smooth.

Once quinoa is cooked, add black beans, cumin, salt, and pepper to taste. Stir well and remove from heat. Portion out quinoa into bowls, and top with veggies, sauce, avocado, cilantro, olives, and salsa. If desired, top with Daiya cheese too!

2. Vegan Quinoa Chili

This delicious vegan chili is perfect for a cold winter night. It is packed with delicious and healthy ingredients, and will warm you right up!

1 tbsp oil (olive or canola)

1 large onion,

diced 3 cloves garlic,

chopped 1 red pepper,

diced 2 tsp chili powder,

1/2 tsp cumin,

1/4 tsp smoked paprika

1/4 tsp oregano

1/4 tsp salt,

1 28oz can diced tomatoes

2 cups vegetable broth

2 cups quinoa, rinsed and drained

2 cans black beans, drained and rinsed

4-5 cups vegetables (I used carrots, corn, and kidney beans)

Optional toppings: Cilantro Avocado Black olives Salsa Daiya cheese (optional)

Heat oil in a large pot over medium heat. Add onion and cook until translucent, about 5-6 minutes. Add garlic and red pepper and cook for another minute or so, stirring occasionally.

Stir in chili powder, cumin, paprika, oregano, salt, tomatoes with their juices, vegetable broth, quinoa, and black beans Bring to a boil then reduce heat to low.

Cover the pot and simmer for 20 minutes. Remove from heat. Portion out chili into bowls or onto plates. Top with veggies of choice! If desired top with Daiya cheese too!

3. Vegan Pizza Rolls

Who doesn’t love delicious pizza rolls? These delicious vegan pizza rolls are the perfect party food! They are delicious, easy to eat, and can be made in advance for convenience.

1 pack rice paper wraps *the brown ones work best!

For the sauce: 1/2 cup peanut butter (or almond butter) 2 tbsp soy sauce or tamari 3-5 tbsp water, depending on how thin you want your sauce 1 tsp sriracha chili garlic sauce 1/4 tsp salt.

Toppings: 1 cup diced tomatoes 1 cup chopped mushrooms 1 green onion, finely chopped Cilantro.

Combine all sauce ingredients in a bowl and stir until smooth Heat oil in a skillet or frying pan over medium heat Add mushrooms and sauté for 5-6 minutes, then add tomatoes and cook another 4-5 minutes.

Remove from heat Mix sauces, veggies, cilantro, and green onions together Roll wraps by submerging them into warm water briefly (about 30 seconds). Place wrap on cutting board and spread about 2 tsp of mixture onto the center of the wrapper.

Fold top corner to cover filling and fold bottom corners up and over the folded top. Dip your finger (or a fork) in water and moisten the remaining parts of the wrapper to make it stick together.

Place on a baking sheet and bake for 10 minutes at 400F.

4. Vegan Chocolate Muffins

These delicious vegan chocolate muffins are perfect for any occasion! They are delicious, moist, and easy to whip up.

1/2 cup coconut oil

1 1/4 cups sugar (I usually use 2/3 cup)

3 tbsp unsweetened cocoa powder

3 tbsp soy milk or other non-dairy milk

1 tsp vanilla extract

1/4 tsp salt

2 cups flour

1 tbsp baking soda Preheat oven to 400F.

Combine all ingredients except the last two in a mixing bowl until smooth Spoon into 12 paper-lined muffin tins.

Bake for 15-20 minutes at 400F.

Let it cool before eating.

5. Vegan Peanut Butter Brownies

1/2 cup flour of your choice (I used whole wheat pastry flour)

1/4 cocoa powder

2 tsp instant coffee or espresso granules (optional, but delicious!)

1 tsp baking powder

1/3 cup sugar (or sweetener if you prefer)

1 tbsp flax meal whisked with 3 tbsp water

2 tbsp oil (canola or peanut)

3 tbsp applesauce (or pureed pumpkin or mashed banana)

1/2 cup peanut butter (or almond butter if you don’t like peanuts!)

Preheat oven to 350°F.

Mix together all dry ingredients in one bowl.

In a separate bowl, mix together all wet ingredients (including flax “egg”) Pour wet ingredients into dry and mix until just combined. Do not overmix!

Pour mixture into an 8×8 inch greased baking dish. Bake for 25-30 minutes or until a toothpick comes out clean.

Let cool completely before cutting into squares. Enjoy!
